Auberge des Tilleuls, Heilles

So on a rainy October night 25 souls braved the inaccurate sat-navs and the Picardie roads to come to the Auberge des Tilleuls in Heilles, a tiny village about two thirds of the way from Chantilly to Beauvais. The format was the usual - a welcome drink ,3 courses plus wine and coffee for the all inclusive price of 40€. The menu was offered by Charles-Edouard Barbier, the young chef who runs the restaurant. Charles-Edouard was trained on the Cote d'Azur and in China, but his menu reflects more local ingredients and styles.

For our dinner we were greeted with a Kir and then we installed ourself on a long table, as we had the restaurant to ourselves especially for the evening. Starter was a choice of a Tartine au maroilles or a Salade gourmande
(Salade, tomates, noix, gésiers, magret fumé, foie gras, toasts et vinaigrette). Maroilles is an extremely pungent Picardie cheese with an excellent taste and the tartine didn't disappoint. The salad was huge and full of meat - almost a meal in itself. Salads ordered here on normal days are even bigger, easily enough for a main meal. The red wine went well with both but the white wine was so sweet is was almost a desert wine. However, it did go very well with the foie gras in the salad, if not with the main courses.

Mains were a choice of Souris d’agneau rôtie au thym or Suprême de volaille sauce vallée d’Auge. This was good simple food, well cooked. The accompanying potato was excellent and the flavours were simple but tasty. This is a chef who knows his limits - if you're going to produce 25 hot meals, all at the same time, you don't want anything complicated. It also went well with the whole tone of the place - it's just good, simple cooking.

Desserts were good too - either the Moelleux au chocolat or the Tartelette tatin - although both could have probably done with a bit less custard as they were swimming a little on the plates!

The evening ended with coffees and the bill; I think everyone agreed that for 40€ they'd enjoyed a good meal and a night out. A straw poll (and looking at the empty plates!) showed that the food had been well received, and quite a few people promised that they'd come back. These small bistros need our support - witness the number of restaurants in small villages that have closed - and I'm glad that Charles-Edouard was able to show what he was capable of. He is a convivial host, and deserves to do well.
